Revolutionize Your Fresh Ground Wheat Pancakes

Pancakes are a huge staple in my household. When we made the switch to fresh ground flour in my house I felt a little out of my depth with how to still enjoy our staples, but with the new whole wheat flour. Thats why I made this Fresh Ground Wheat Pancakes recipe. But before we get to that let’s talk about the why for a second. Why switch to fresh milled flour at home?

Throughout ancient history, grains were swiftly milled into bread and other products. However, modern industrialization has altered this process, stripping grains of their vitality and essential oils, leading to decreased quality and nutritional value. This shift has resulted in health issues, prompting manufacturers to fortify processed flour with synthetic nutrients. To counteract this, I’ve transitioned to using fresh ground whole wheat flour, utilizing an at-home stone mill. Since embracing this change, I’ve noticed increased satiety and fulfillment compared to using commercial flour. Numerous studies highlight the health benefits of whole wheat, including its ability to prevent various ailments such as constipation, heart disease, diabetes, and obesity. Making the switch to fresh ground whole wheat flour offers a multitude of benefits for both health and well-being.

 

Why Fresh Ground Flour?

Throughout ancient history grains have been milled and turned into bread and bread products within a very short window of time. The modernization and industrialization has created a dramatic change in the way grain has been processed and consumed. The quality and life has been squeezed out of it. The vitality (bran) and oils in the grains is what makes it go rancid faster which makes the product with a very short shelf life. This is not ideal for transporting grain to other places. Their solution to this problem is to take out the bran and the oils. This was not good for peoples health and people started having major health issued so the manufactures started to add vitamins and minerals after to supplement what they were taking out of it. This is far from optimal. Human’s need living food to thrive and prevent disease. The solution I have found is to switch from commercially ground flour to grinding my own wheat berries at home. I have purchased an at home stone mill.

The Research

Since beginning this journey there have been so many amazing discoveries for example how many published studies there are on the benefits of whole wheat. According to this study it can prevent many health issues, “Wheat possesses several health benefits, especially when utilized as a whole‐grain product. According to Kumar et al. (2011), wheat provides protection against diseases such as constipation, ischaemic, heart disease, diverticulum, appendicitis, diabetes, and obesity.” There are so many benefits from making the switch to fresh ground whole wheat flour, and these are just a few.

The Flavor Difference 

The flavor of fresh ground whole wheat is complex and delicious. The convenient thing is you can choose different types of grains based on your families tastes and desires. Hard red wheat is nutting and full of rich flavor. It also has that “whole wheat” look in color when you bake with it. Hard white wheat is more mild in flavor and it has a closer color and texture to commercial wheat. It isn’t the same as commercial flour. It is the upgraded version in taste! Commercial flour has a far less distinct flavor. Comparatively it tastes like nothing. This is why I love this pancake recipe! These whole wheat pancakes taste so delicious people don’t usually know that they are whole wheat. This is great for picky kids especially! Sometimes if something looks too “healthy” kids are not about it. This Fresh Ground Wheat Pancakes recipe has the kids stamp approval.

Fresh Milled Wheat Pancakes

These Pancakes are very fluffy and filling.
Yield: 8 Small Pancakes

Equipment

  • Large Mixing Bowl
  • Wisk

Materials

  • ½ Cup Fresh Milled Hard White Wheat Flour (65g) Fine Mill
  • ½ Cup Fresh Milled Soft White Wheat Flour (65g) Fine Mill
  • 1 tbsp Baking Powder
  • 1/2 tsp Salt
  • 1 tbsp Sugar
  • 1 Cup Buttermilk
  • 1 Egg Medium or Large Size
  • 2 tbsp Olive Oil or Melted Butter I like Olive oil
  • 1 tsp Vanilla Extract

Instructions

  • Mix wet ingredients (Buttermilk, Egg, Olive Oil, Vanilla Extract) thoroughly in a jar or separate bowl.
  • Mill grains in a large bowl, add baking powder, salt, and sugar, whisk to combine. Add wet ingredients and whisk contiguously. Whisk as little as possible to combine and removed dry flour clumps. Let sit for 5-8 mins.
  • Preheat Electric Griddle to 325℉ or a skillet to Medium High. Set oven to warm. Use butter to grease griddle or skillet. Using a 1/4 cup measuring spoon or ladle poor batter onto hot pan. Cook until bubbles form on the top of the batter and flip. Cook until bottom is browned. Feel free to add blueberries, or chocolate. I sometimes do a bit of both.
  • Enjoy this delicious meal with your loved ones.
